Craft Your Own Fruit Wine With Ease
Turn your favourite fruits into delicious homemade wine with our Fruit Wine Kit.
This kit includes all the essential winemaking agents you need to turn almost any fruit into a unique, flavourful wine. Simply gather and prepare your fruit, add the required sugar, and follow the straightforward instructions to create 6 bottles (4.5 litres) of one-of-a-kind wine.
Fruit-winemaking allows for a lot of experimentation and there is no ‘standard’ recipe, but to get you started, we’ve created the following recipes using some commonly used fruits. For each recipe:
1. Gather the amount of fruit and sugar as indicated.
2. Prepare your fruit following the fruit preparation guidelines below.
3. Proceed to follow the Fruit Wine Kit Instructions to create your perfect batch.

Fruit Wine Recipes
For the following recipes you will require the following equipment:
- Primary fermenter (5 L)
- Airlock
- Thermometer strip
- Straining bag capable of holding 2-3 kg fruit when tied up
- Mixing spoon/paddle
- Demijohn & Bored Bung / Secondary fermenter (5 L)
- Syphon
- Handcraft Supplies Cleaner & Sanitiser
Optional:
- Hydrometer
- Trial jar
For bottling:
- 6 x 750 ml wine bottles
- 6 corks & corker / screw caps

Apple Wine
Light, crisp, and delicately dry, apple wine offers a refreshing acidity with subtle notes of orchard blossom and a clean, smooth finish. Ideal served chilled on warm days.
Fruit & Weight: Apples – 3 kg
Use 500 g dried fruit or 2 kg tinned fruit (including liquid) if fresh is unavailable.
Preparation: Use a mix of sweet, sour and cooking apples for optimal results. Wash apples with cold water then chop into small pieces, discarding any bruised pieces or maggot covers.
If using tinned fruit, rinse the fruit first or adjust the sugar addition accordingly if adding the syrup.

Apricot Wine
Lusciously fruity with a balance of sweetness and gentle acidity. Fragrant and floral on the nose with a bright golden hue. Finishes with a soft, lingering stone-fruit warmth.
Fruit & Weight: Apricots – 2 kg
Use 500 g dried fruit or 2 kg tinned fruit (including liquid) if fresh is unavailable.
Preparation: Wash apricots with cold water. Remove stones and cut into halves or quarters.
If using tinned fruit, rinse the fruit first or adjust the sugar addition accordingly if adding the syrup.

Black Forest Fruit Wine
This recipe combines the rich, tart flavours found in forest fruits to create a wine that is reminiscent of a black forest dessert - deep in colour, sweet, and bursting with berry flavours.
Fruit & Weight: Mixed berries – 2 kg
Use 400 g dried mixed berries or 1.8 kg tinned fruit (including liquid) if fresh is unavailable.
Preparation: Use a mix of blackberries, cherries, and raspberries for authentic Black Forest flavor. Wash fruit with cold water and remove any stalks.
If using tinned fruit, rinse the fruit first or adjust the sugar addition accordingly if adding the syrup.
Sugar: 1 kg

Blackberry Wine
Deep and velvety with rich berry tones and a hint of spice, blackberry wine balances sweetness with a gentle acidity. It pairs well with roasted meats or rich desserts.
Fruit & Weight: Blackberries – 2 kg
Use 400 g dried fruit or 1.7 kg tinned fruit (including liquid) if fresh is unavailable.
Preparation: Blackberries should be ripe for optimal results. Wash with cold water before use.

Blueberry Wine
Rich and jammy with deep berry character, blueberry wine brings forward hints of spice and earthiness, balanced by a soft, mellow sweetness. A great choice for sipping or pairing with cheese.
Fruit & Weight: Blueberries – 2 kg
Use 400 g dried fruit or 1.7 kg tinned fruit (including liquid) if fresh is unavailable.
Preparation: Blueberries should be ripe for optimal results. Wash with cold water before use.

Cherry Wine
Tart and vibrant, cherry wine is packed with sharp cherry flavour balanced by a soft finish and just a touch of sweetness. Enjoy on its own or with dark chocolate.
Fruit & Weight: Cherries – 2-3 kg
Use 450 g dried fruit or 2 kg tinned fruit (including liquid) if fresh is unavailable.
Preparation: Use only morello cherries or a mix of cherries and morello. Remove stalks and stones using an olive pitter and remove cherries from their stalks using a fork and discard the stalks. Wash with cold water before use.
If using tinned fruit, rinse the fruit first or adjust the sugar addition accordingly if adding the syrup.

Elderberry Wine
Bold and full-bodied, elderberry wine delivers intense dark fruit flavours with a touch of tannin and a warming, port-like depth. Excellent for maturing or enjoying beside hearty dishes.
Fruit & Weight: Elderberries – 1-1.5 kg
Use 300 g dried fruit if fresh is unavailable.
Preparation: Only use ripe, black elderberries. Strip the berries from their stalks using a fork and discard the stalks. Wash with cold water before use.
Sugar: 1 kg

Citric Acid: 1 sachet

Elderflower Wine
Elegant and floral, elderflower wine is dry and aromatic with fresh citrus notes and a delicate fragrance reminiscent of summer meadows. A perfect aperitif.
Fruit & Weight: Elderflowers – 150-200 g fresh heads
Use only fresh elderflowers. Dried flowers can be used but reduce to 50 g.
Preparation: Pick elderflower heads on a dry sunny day when fully open. Shake gently to remove insects. Do not wash as this removes flavor. Remove as much green stalk as possible as it can add bitterness.

Feijoa Wine
Exotic and aromatic, feijoa wine offers tropical notes of guava and pineapple with a slightly tangy edge and a soft, off-dry finish. A unique, fragrant wine that stands out chilled on a summer evening.
Fruit & Weight: Feijoas – 2 kg
Use only fresh ripe feijoas. No dried or tinned alternative recommended.
Preparation: Use ripe feijoas for optimal results. Wash with cold water. Cut in half and scoop out flesh, discarding skins which can add bitterness.
Feijoas should be soft and aromatic when ripe. Avoid using underripe fruit.
Sugar: 1 kg

Citric Acid: 1 sachet

Country Grape Wine
Clean and approachable with fresh grape character and gentle acidity. A straightforward, easy-drinking wine with subtle fruit notes and a crisp finish. Serve chilled as a versatile table wine.
Fruit & Weight: Table grapes – 3 kg
Use only fresh grapes. No dried or tinned alternative
recommended.
Preparation: Use ripe table grapes (any variety). Remove from stems and wash with cold water. Crush grapes gently to release juice.
For red wine, leave skins in during fermentation. For white wine, remove skins before fermentation.
Sugar: 1 kg
Tannin: None (grapes contain natural tannins)
Citric Acid: None (grapes are naturally acidic)

Lime Wine
Intensely citrusy and refreshingly sharp, lime wine delivers bright acidity with zesty lime peel notes and a clean, invigorating finish. Perfect as a summer aperitif or mixed with sparkling water.
Fruit & Weight: Limes – 1.5 kg (approximately 15-20 limes)
Use only fresh limes. No dried or tinned alternative
recommended.
Preparation: Wash limes with cold water. Zest the limes (avoiding white pith which adds bitterness), then juice them. Use both zest and juice.
Do not include any white pith or seeds.
Sugar: 1 kg

Citric Acid: None (limes are very acidic naturally)

Lychee Wine
Delicately perfumed with exotic floral notes, lychee wine offers tropical sweetness balanced by gentle acidity. Light and aromatic with a silky texture. Serve well-chilled as a unique dessert wine.
Fruit & Weight: Lychees – 2 kg
Use 400 g dried lychees or 1.8 kg tinned lychees (including liquid) if fresh is unavailable.
Preparation: Use ripe lychees for optimal results. Peel lychees and remove seeds. Wash with cold water.
If using tinned fruit, rinse the fruit first or adjust the sugar addition accordingly if adding the syrup.

Mango Wine
Lush and tropical with ripe mango sweetness and a hint of citrus tang. Golden in colour with smooth, rounded fruit flavours and a soft finish. A crowd-pleaser served chilled on warm days.
Fruit & Weight: Mangoes – 2.5 kg
Use 400 g dried mango or 2 kg tinned mango (including liquid) if fresh is unavailable.
Preparation: Use ripe mangoes for optimal results. Peel mangoes, remove seeds, and cut flesh into chunks. Wash with cold water.
If using tinned fruit, rinse the fruit first or adjust the sugar addition accordingly if adding the syrup.

Nectarine Wine
Juicy and aromatic with vibrant stone fruit character and a touch of honey sweetness. Bright acidity keeps it fresh and lively. Excellent chilled or paired with light summer dishes.
Fruit & Weight: Nectarines – 2.5 kg
Use 500 g dried fruit or 2 kg tinned fruit (including liquid) if fresh is unavailable.
Preparation: Use ripe nectarines for optimal results. Wash with cold water, remove stones, and cut into quarters or eighths.
If using tinned fruit, rinse the fruit first or adjust the sugar addition accordingly if adding the syrup.

Orange Wine (Valencia)
Bright and tangy with fresh citrus zest and sweet orange notes. Clean acidity with a hint of bitterness on the finish. Refreshing served chilled or used in cocktails and punches.
Fruit & Weight: Valencia oranges – 2 kg (approximately 10-12 oranges)
Use only fresh oranges. No dried or tinned alternative recommended.
Preparation: Wash oranges with cold water. Zest the oranges (avoiding white pith which adds bitterness), then juice them. Use both zest and juice.
Do not include any white pith or seeds.
Sugar: 1 kg

Citric Acid: None (oranges are naturally acidic)

Papaya Wine
Soft and tropical with gentle papaya sweetness and subtle melon-like notes. Light-bodied and smooth with a mellow, easy-drinking character. Serve chilled as an exotic aperitif.
Fruit & Weight: Papaya – 2.5 kg
Use 400 g dried papaya or 2 kg tinned papaya (including liquid) if fresh is unavailable.
Preparation: Use ripe papaya for optimal results. Cut in half, remove seeds, peel, and cut flesh into chunks. Wash with cold water.
If using tinned fruit, rinse the fruit first or adjust the sugar addition accordingly if adding the syrup.

Passionfruit Wine
Intensely aromatic and boldly tropical, passionfruit wine is tangy, vibrant, and full of character. Sharp acidity balanced by natural sweetness creates a refreshing, mouth-watering finish.
Fruit & Weight: Passionfruit – 2 kg (approximately 40-50 fruits)
Use only fresh ripe passionfruit. Frozen pulp can be used at 1.5 kg if fresh is unavailable.
Preparation: Use ripe, wrinkled passionfruit for optimal results. Cut in half and scoop out pulp including seeds.
Seeds can be left in or strained out depending on preference. If using frozen pulp, thaw completely before use.

Citric Acid: None (passionfruit is very acidic naturally)

Peach Wine
Fragrant and succulent with ripe peach flavours and a hint of floral sweetness. Smooth and rounded with gentle acidity. A classic summer wine that's lovely served chilled on its own.
Fruit & Weight: Peaches – 2.5 kg
Use 500 g dried fruit or 2 kg tinned fruit (including liquid) if fresh is unavailable.
Preparation: Use ripe peaches for optimal results. Wash with cold water, remove stones, and cut into quarters or eighths. Peeling is optional.
If using tinned fruit, rinse the fruit first or adjust the sugar addition accordingly if adding the syrup.

Pear Wine
Delicately perfumed and subtly sweet, pear wine has a smooth, rounded palate with hints of honey and vanilla. A gentle, easy-drinking wine with soft charm.

Use 500 g dried fruit or 2.5 kg tinned fruit (including liquid) if fresh is unavailable.
Preparation: Wash pears with cold water then chop into small pieces, discarding any bruised pieces or maggot covers.
If using tinned fruit, rinse the fruit first or adjust the sugar addition accordingly if adding the syrup.

Pineapple Wine
Bright and tropical with zingy pineapple character and refreshing acidity. Crisp and fruity with a clean finish. Perfect served chilled, with light seafood, or as a base for tropical cocktails.

Use 400 g dried pineapple or 2 kg tinned pineapple (including liquid) if fresh is unavailable.
Preparation: Use ripe pineapples for optimal results. Remove top and bottom, cut off outer skin, remove core, and cut flesh
into chunks.
If using tinned fruit, rinse the fruit first or adjust the sugar addition accordingly if adding the syrup.

Plum Wine
Smooth and mellow with gentle sweetness, plum wine showcases ripe stone fruit flavours and a whisper of almond on the finish. Lovely as a dessert wine or served lightly chilled.

Use 500 g dried fruit or 1.8 kg tinned fruit (including liquid) if fresh is unavailable.
Preparation: Wash plums with cold water then remove and discard stones.
If using tinned fruit, rinse the fruit first or adjust the sugar addition accordingly if adding the syrup.

Raspberry Wine
Bright, vibrant, and fruit-forward, raspberry wine is bursting with tart berry character and a refreshing zing. Ideal chilled, either on its own or with sparkling water.
Fruit & Weight: Raspberries – 2 kg
Use 350 g dried fruit or 1.8 kg tinned fruit (including liquid) if fresh is unavailable.
Preparation: Raspberries should be ripe for optimal results. Wash with cold water before use.
If using tinned fruit, rinse the fruit first or adjust the sugar addition accordingly if adding the syrup.

Rhubarb Wine
Bright and zesty with a mouth-watering tartness, rhubarb wine is crisp, refreshing, and versatile, with a clean finish and just enough sweetness to balance its tang.
Fruit & Weight: Rhubarb – 2.5 kg
Use only fresh rhubarb. Frozen rhubarb can be used at same weight if fresh is unavailable.
Preparation: Use only the pink/red stalks for best color. Wash rhubarb with cold water and chop into 2-3 cm pieces. Do not use leaves as they are toxic.
If using frozen rhubarb, thaw completely before use.

Strawberry Wine
Light and summery with sweet, juicy fruit notes, strawberry wine is soft and fragrant with a touch of floral freshness. A delightful choice for warm-weather sipping.
Fruit & Weight: Strawberries – 2.5 kg
Use 450 g dried fruit or 2.2 kg tinned fruit (including liquid) if fresh is unavailable.
Preparation: Strawberries should be ripe for optimal results. Wash with cold water. Remove and discard leaves and stalks, then wash with cold water. Chop larger strawberries into smaller pieces.
If using tinned fruit, rinse the fruit first or adjust the sugar addition accordingly if adding the syrup.
